捞鱼生 － YUSHENG

今天是元宵节， 农历新年总算过完了！
捞鱼生在我国不只是农历新年期间的一种特色，它也似乎成了人们过年的一种习俗。 毕竟大家都希望讨个好意头， 在新的一年能捞得风生水起，越捞越旺！ 说真的， 我倒不相信这样的一个说法， 但是我却很喜欢吃鱼生！
这个农历新年， 我就吃了六次的鱼生。幸好鱼生的主要配料是菜类和鱼， 不然我可要成大肥婆了！

斋菜

老公和我并没有在年初一吃斋的习俗，但每年的这个时候我都会煮一道我们很喜欢吃的健康菜 － 斋菜。这也是一道给我很多童年回忆的菜。
小的时候， 年初一都会跟父母到亲友家拜年。每年的第一站一定先到一位算是亲戚， 我们称他为阿公的家。在阿公家，除了吃糕饼糖果、拿红包外， 也必定吃上阿公在除夕夜晚亲手煮的斋菜。那就成了我们拜年的一个习惯， 至到阿公去世。
在家里， 我那煮得一手好菜但已过世多年的阿嬷也会煮这一道菜。 后来妈妈也学会了煮， 并延续了过年吃斋菜的习惯。 我因为喜欢也很回味这一道菜，而且对烹饪还有点兴趣， 所以多年前就讨教于妈妈。然后根据自己的方式与喜好， 作些调整， 让这一道菜成为年初一老公和我必吃的佳肴。
今天也不例外。吃过早餐后， 就开始准备配料。 花上三、四个钟头， 煮了一锅的斋菜，好好的享用！

斋菜的配料有 ： 上海南乳（或称红乳）、生姜、香菇、黑木茸、金针、包菜（一大粒）、冬粉、豆卜、 豆腐皮（或称豆支). 妈妈通常都会用甜豆支，炸过之后才放入锅里与其他材料一起煮。但我都改用普通豆支， 因为我的烹饪方式是不油炸的。发菜也是配料之一， 但我今年就不用了。 我认为发菜对于整道菜的味道没有什么作用，主要是因为过新年，用它来讨个好预头吧！
